Blackberries (3-4)
1 oz Simple Syrup
1 oz Pineapple Juice
.5 oz Egg White
Purple Lune by De Soi
Blackberries

Muddle blackberries and simple syrup in a cocktail shaker. Add pineapple juice and egg white and dry shake until frothy. Add ice, shake vigorously, and strain into a coupe glass. Top with Purple Lune and garnish with blackberries. Add 1 oz of Empress 1908 Gin to turn into a low ABV cocktail.
